Pre-extruders are typically needed in gum process to receive the dough from the mixers and, by processing it through its temperature-controlled chamber and die–head, to deliver a continuous sheet of mass homogenously distributed and at proper temperature for downstream operations. It is implemented at times into chewy candy process as well for improved product texture and product stabilization.
